This easy-to-make recipe captures the essence of Hawaii's iconic dish with just a handful of key ingredients. Slow-cooked to perfection, this Kalua Pork will melt in your mouth and fill your kitchen with a smoky aroma that's reminiscent of the island's traditions.

In Hawaii I ate Kalua for breakfast which didn't seem to be unusual. It was absolutely delicious but what probably surprised me most was how simple it was. Pork, salt and smoky flavouring (often liquid smoke as it's traditionally smoked in the ground in banana leaves). This means it goes with absolutely anything. And unlike MANY american pulled pork recipes, doesn't come with a sugar load higher than your average ice cream.





Ingredients:

  • Pork Roast (size of your choice)

  • Sea salt

  • Smoked paprika

Instructions:

  1. Start by selecting a pork roast of your desired size. While a bone-in roast can add extra flavour, it's not mandatory for a delicious Kalua Pork.

  2. Place the pork roast in your slow cooker and generously season it with sea salt and smoked paprika. The salt will enhance the flavours, while the smoked paprika will provide that coveted smokiness, reminiscent of the traditional Kalua Pig.

  3. Add a small amount of water to the slow cooker, just enough to keep the pot moist. This water will gradually become a deliciously smoky broth during cooking.

  4. Cover the slow cooker and set it to the appropriate heat level. You have two options:

    • High Heat: Cook for 6 to 8 hours. The pork will become tender and fall-off-the-bone succulent in this time frame.

    • Low Heat: For a more extended, slow-cooked flavour, let it cook for 16 to 24 hours. This low-and-slow method will yield incredibly juicy and flavourful results.

    • Optional but epic: take the meat off, add water, additional salt, spices and and leave the bones in for another 12 hours


Once the cooking time is complete, the pork should be tender and easy to shred. Using two forks, pull the meat apart into small, bite-sized pieces. This is where you'll truly appreciate the rich, smoky, and juicy flavours.


Serve your Kalua Pork in various ways, as it's incredibly versatile:

  • Enjoy it on its own, Hawaiian plate lunch-style.

  • Pile it into sandwiches and sliders for a delightful, smoky twist.

  • Use it as a filling for tacos, burritos, or nachos.

  • Top cauliflower rice or lettuce tacos with the flavourful meat.

  • Add it to salads to transform them into hearty, satisfying meals.
