Paella is a traditional Spanish rice dish known for its rich flavours and vibrant colours. While traditionally made with rice, this Paleo adaptation uses cauliflower rice, making it lower in carbohydrates and reducing the calorie load compared to the original version.

Recipe: Paleo Prawn and Chorizo Paella
Ingredients:
1 tablespoon olive oil
200g prawns, peeled and deveined
100g chorizo, sliced
1 medium-sized capsicum (bell pepper), diced
2 cloves garlic, minced
1 onion, diced
1 can (400g) chopped tomatoes
1 cup cauliflower rice
1/2 cup white wine
1 teaspoon smoked paprika
1/2 teaspoon saffron threads (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a large skillet or paella pan over medium heat.
Add the prawns and chorizo to the pan and cook until the prawns turn pink and the chorizo releases its oils and browns slightly. Remove the prawns and chorizo from the pan and set aside.
In the same pan, add the diced capsicum, minced garlic, and diced onion. Sauté until the vegetables soften and become fragrant.
Stir in the chopped tomatoes, cauliflower rice, white wine, smoked paprika, saffron threads (if using), and season with salt and pepper. Allow the mixture to simmer for 5-7 minutes, allowing the flavors to meld together.
Return the cooked prawns and chorizo to the pan, stirring gently to combine.
Reduce the heat to low, cover the pan, and let it simmer for an additional 10-15 minutes, or until the cauliflower rice is tender and the flavors have melded.
Once cooked, remove the pan from heat and let it sit, covered, for a few minutes.
