My Low Carb, High Protein Nachos Recipe
This is one of my favourite dishes to cook and eat with the family.
I know first hand it is not practical or enjoyable to cook your family a delicious meal, whilst you measure out and eat chicken breast and brocolli. Life is too short.
You should have to cook 2 different meals to look after your body. So here is a hack I use regularly to enjoy nachos with the family.
The keys? I skip the beans in the mince and make my own nacho chips with a low carb wrap. It takes minutes!
So, let's get into it. My Low Carb, High Protein Nachos Recipe
Ingredients:
Ground mince (beef or turkey, as preferred)
1 onion, finely chopped
2 garlic cloves, minced
Spices: cumin, chili powder, paprika (adjust to taste)
1-2 tablespoons of tomato paste
Salt and pepper to taste
Farrah's Keto Wrap (or any low-carb wrap)
Shop-bought guacamole, salsa, and sour cream
Optional: grated cheese (don’t forget this like I did!)
Instructions:
Prep the Mince:
In a large skillet, sauté the onion and garlic until they’re just beginning to soften.
Add the ground mince, breaking it up with a spoon. Cook until browned.
Stir in the tomato paste and spices. Cook for another few minutes until everything is well-combined and fragrant. Season with salt and pepper to taste. If cooking for the family, you can remove a portion of the mince now and set it aside for a bean-free version.
Make the Nacho Chips:
Preheat your air fryer to 180°C (350°F).
Take a low-carb wrap and cut it into nacho chip-sized triangles using scissors.
Place the wrap pieces in the air fryer basket in a single layer. Cook for 10-15 minutes until they are crisp and golden. Watch them closely to ensure they don’t burn!
Assemble the Nachos:
Arrange the crispy low-carb chips on a plate.
Spoon the cooked mince over the chips.
Top with generous dollops of guacamole, salsa, and sour cream. If you have it, sprinkle shredded cheese on top.
